Add apples, brown sugar, lemon/lime, ginger, cinnamon sticks, cloves, pumpkin spice, and star anise to pot
Add enough water to fill pot
Cover and cook on low for 15 hours. Apples will be golden brown.
Mash with potato masher or use immersion blender
Run mixture through a fine mesh strainer and catch the liquid. Put solids aside for later use
Add about 1/2 cup of solids back into the Apple Cider
Add white sugar to taste (~ 1/4 c, depending on sweetness desired)
Store in a pitcher

Store apple cider in a pitcher in the refrigerator for up to 3 weeks.Mix thoroughly before pouring.Calorie information was calculated with the amount of white granulated sugar I add for my family (1/4 cup), less white sugar will lead to less calories and more will lead to a greater amount of calories.
