Homemade Low(er)-Calorie CrunchWrap Supreme Copy Cat

Finding the proper ingredients
As with many people, I am on a health journey. I started with my mental and emotional health, and now it is finally time to concentrate on my physical health. I have made quite a few lower calorie meals with this one being one of my favorite– copycat Taco Bell CrunchWraps. Grocery stores by me offer a plethora of fairly inexpensive low calorie options for foods, so finding ingredients is always fairly easy. However, keep in mind that you should do what is best for you– ingredients I list may be more expensive then other types of ingredients in your area. Because of this, the calories may vary if you use different ingredients. The biggest example I have is the large flour tortillas– when researching other brands online, I found that I am lucky to have a Kroger by me; I was not aware how hard it is to find large flour tortillas less then 250 calories. If this is not possible for you to find large flour tortillas that are less then 250 calories per serving, and buying online isn’t possible, then finding any large flour tortilla will work– just find the lowest calorie one you can.
Toppings
If low calorie is the goal, then using low calorie alternatives is a necessity. The goal in my house is currently low calorie BUT delicious, cost effective, and sustainable. For that reason, I highly recommend shopping around to find places that have the best prices for what you need. A traditional Crunch Wrap from Taco Bell has beef, nacho cheese, lettuce, tomatoes, sour cream and a tostada. According to the Taco Bell Website, a crunch wrap supreme has 540 calories. Overall, the crunchwrap from Taco Bell does not have terrible calories, so my recipe is not very far below it. The calories for my recipe come in at approx. 473 calories per wrap, which will save a little less than 70 calories. Although this isn’t a huge difference compared to Taco Bell, this recipe is significantly less in sodium and preservatives.
If you’re willing to get away from the traditional Ground Beef Crunch wrap, then you can make an even lower calorie meal. Substitute ground beef with shredded chicken breast or lean ground turkey breast for an even lower calorie dish.
What is “Passive cooking time”?
The amount of time that something will cook but you do not need to babysit it! Think of this as the time that it takes a rice cooker to make rice, a slow cooker to cook food, or (in our case) the amount of time it takes an air fryer to crisp our Corn tortilla!
Low(er) Calorie CrunchWrap Supreme
Equipment
- 1 air fryer optional
- 1 nonstick pan
Ingredients
- 2 tbsp light sour cream
- 1/4 cup light mexican cheese
- 2 tbsp tomato diced
- 1 corn tortilla
- 1 tbsp salsa con queso
- 1 burrito tortilla
- 2 tbsp iceburg lettuce shredded
- 1/3 c 97% lean ground beef
- 1/4 packet taco seasoning (approx. 2 tablespoons)
Instructions
- Air Fry corn tortilla on 350 until crispy (approx. 6 minutes). If you do not have an air fryer, then heat on a nonstick pan until crispy on both sides (approx. 10 minutes)
- Cook meat and drain off excess fat to prevent meat from reabsorbing fat (allowing fat to reabsorb will cause soggy crunch wraps!). Season with the taco seasoning
- Assemble crunchwrap. Put meat, sour cream, salsa con queso, tomato, light sour cream in the middle of the burrito tortilla. Put the crunchy corn tortilla (tostada) on top. Put the Mexican cheese on the tostada and gently fold the excess tortilla on top. Carefully flip onto a hot nonstick pan and cook until cheese is melted; this acts as the adhesive to hold it all together. Flip and cook on the other side for another minute.
- Serve warm and enjoy!
